Eddie Adams was introduced to his native New Orleans cuisine at the age of 14, starting his remarkable career as a humble busboy at the famed Brennan's French Quarter Restaurant. Matriarch Ella Brennan recognized something special about Eddie, and he quickly climbed the ranks in the front of the house as waiter and bartender, and soon found himself immersed in the back-of-the-house cooking alongside Chef Prudhomme and Chef Emeril Lagasse at New Orleans' famous Commander's Palace! Soon after, Eddie became a restauranteur running over a dozen restaurants throughout the United States.
